Premium seafood, filet, and specialty ingredients typically fall on the higher end. Sales tax depends on where the service is performed.

    When Cocktail Party Service Fits

    Guest counts typically run from twenty (smaller cocktail receptions) to eighty (larger formal cocktail parties). Above eighty, the format shifts toward catering rather than chef service.

    Service Formats

    Passed courses. Service staff circulate with trays of small plates and bites throughout the service window. The most formal cocktail party format. Requires the most service staff — typically one server per fifteen to twenty guests.

    Stations. Multiple serving stations distributed around the space. Guests serve themselves; stations are tended by service staff or the chef. Good for larger guest counts and less formal feel.

    Elevated grazing. A composed grazing display — boards, crudités, cheese and charcuterie, sliced proteins, small composed plates — set out at the start of service and tended throughout. Less staffing-intensive, more casual.

    Hybrid. Most parties combine formats — passed appetizers during the first hour, stations or grazing through the rest of service.

    • Coastal passed courses. Mini crab cakes with rémoulade, tuna tartare on crisps, oyster shooter, peekytoe crab salad on endive, beef tenderloin crostini.
    • Holiday hybrid. Charcuterie and cheese station, passed canapés (smoked salmon, fig and prosciutto, mini grilled cheese with tomato soup shooter), carving station with beef tenderloin, dessert grazing.
    • Engagement reception. Passed champagne service, elevated grazing display, hot passed courses (lobster sliders, scallops on shell, lamb chops), dessert and coffee station.
